Without fail, tacos are on the menu in our kitchen at least twice a month. Since we eat a plant-based diet, we have to get creative – lentils or another meat alternative always serve as our base. But the beauty of tacos really rests in the freshness of your other ingredients. A slow food, garden-raised taco is a food unto itself – one I can enjoy even though we eat seasonally deep into winter.
🥬 Harvesting lettuce from the tray, I looked to the window and considered the chill winter air just outside, marveling that we could grow like this despite the weather, despite the lack of sun (thanks to the built-in energy-efficient LEDs) #clickandgrow 🌱
